Don't really have the recipe though and make it a little different each time.  I usually start with a whole white onion that I chop up and then sweat in a big pan with some butter and some oil until it's soft.  Then add about a pound of ground beef and a pound of ground pork (sometimes hot italian sausage) and brown with some water added if needed.  Dump it all into a crock pot with one of those large cans of tomato sauce and some chopped tomatoes.  Mix in a package of that Carol Shelby chili seasoning and some additional cayenne.  Add red beans if you like beans in your chili and let it sit on low heat pretty much all day.  Pretty basic.

Just made a recipe from Mens Health yesterday.  Wife said, "That was the worst chili (not TLC member or country) that I have ever eaten".  So, don't use that recipe.

sd tip:  Never make a "healthy" recipe.  Always ends in disappointment.

Here's one I've been working on.  It placed at a little private chili competition recently, so it shouldn't be too bad.

Fry 4 strips of bacon.  Keep the grease in the pan.

Dice:

1 green bell pepper.
1 poblano pepper.
2 serrano peppers.
.75 white onion
1 clove garlic.

Saute' those in the bacon grease briefly, then add 1.5 lbs ground beef and get it good and brown.

Meanwhile, combine in your stock pot:

4 cans kidney bean
1 can diced tomato
1 6 oz. can tomato paste
1 teaspoon salt
1 bay leaf
3 teaspoons light brown sugar
3.5 tablespoons chili chowder
5 shakes Tabasco
5 dashes Worcestershire
Crumbled bacon that you fried in step 1.
Pinches of thyme, oregano, and cumin.
~ 4 oz. of a brown ale or stout (ie, Guinness), and ~1 oz. whiskey.

Add ground beef once it's browned and let it all simmer at least 2 hours.

LOL, do this all the fracking time and it ALWAYS ends in disappointment.

I used the tobasco brand chili starter the other day and it was pretty decent.

peppered bacon or regular bacon? cause it seems to me that bacon is the best food in the world and peppered bacon is the best kind of bacon. if you're not using ppd bakes, you should consider it. looks like a good recipe though.

What cire said.  Just like any other herb.  Adds subtle flavor. 

Have not used peppered bacon, RD.  I'll have to try that.  I do make sure it's thick cut.

3 meats. Ground beef, spicy chorizo and steak cubes.

Also, add brown sugar and molasses.

I have a great recipe that we cook quite often at Chez Weird Robert's Foam Finger - give this a whirl:

Chili with Chipotle and Chocolate
 
Cooking spray
2 cups diced onion (about 1 large)
1 tsp minced garlic
1 1/4 pounds stew meat (or ground turkey!)
3 T brown sugar
2 T ancho chile chowder
1 1/2 T dark, dark unsweetened cocoa (use the dark chocolate kind in the baking goods aisle)
1 tsp ground cumin
1/2 tsp ground pepper
1/4 tsp kosher salt
1 (15 ounce) can, pinto beans, rinsed and drained
1 (15 ounce) can, kidney beans, rinsed and drained
2 (14.5 ounce) cans, diced tomatoes, undrained
1 (14 ounce) can fat free, low sodium chicken broth
2 chipotle chiles, canned in adobo sauce, minced
2 ounces bitter or unsweetened chocolate, chopped
 
Heat a Dutch oven over medium-high heat.  Coat pan with cooking spray.  Add onion, garlic and meat to pan; sauce until the meat is browned and the onions are translucent.  Add sugar and the next 9 ingredients (through the chipotles) to pan, stirring to blend; bring to a boil.  Reduce heat, simmer 15 minutes or until slightly thickened, stirring occasionally.  Add chocolate, stirring to melt. 
 
Top with chopped green onions and fat-free sour cream (and if you like, reduced fat shredded cheddar).  Serves 8.

The flavors actually blend brilliantly - trust me on this.

Dad called it firehouse chili, but he likes to make people feel bad.  This is really good stuff, and the chocolate helps with the acid reflux.   :lick:
