It’s marinated in the carneceria that I go to. It’s not quite adobada but it does have that hue. Lots of lime.

They slice the skirt steak SUPER thin and it’s 6$/lb. they pull it out of a bucket at the meat counter and it’s delicious.

Pickled onion is a must. The salsa is i believe arbol, habanero, tomato. It’s fire.

There’s a bed of guac on the bottom

They are just store bought corn tortillas.  They key is to pass them all individually through a bowl of water and shake them off right as you put them on the griddle.

i made my patented instant pot carnitas but the hack was that i used boneless beef rib fingers instead of pork shoulder. it was p nice.

then i used the rendered beef fat to make the tortillas. also p p nice, but bacon grease tortillas are better i think.

how often do you guys make tacos?  not talking about fancy tacos, i'm talking about mom's tacos- ground beef, some sodium filled seasoning, sour cream, lettuce, pace, cheese, etc?

what about fancy tacos?


We make tacos at least once a week. Two of my kids are capable of making fresh guacamole and none of us ever get tired of tacos.
