I don't know if I've mentioned it, but I was making a lot of tacos this year from greens (mustard, spinach, kale, shard, broccollini etc). You need a good strong sauce and I like a salty cheese.

my wife got into making a ton of spinach and cheese tacos/quesadillas this year. kinda got sick of them.

Carne Asada tacos tonight. Went on the wild side and used a tomato and basil feta on one. It was pretty good.

I had taco Tuesday at my house too

Do not recommend using beyond beef instead of ground beef or turkey, they tasted like barf

Which was surprising because I'd used beyond beef for sloppy joes and they turned out fantastic

No after photos, this was the high point
