Man, birria tacos are lots of work but even more payoff. I used tablitas and chuck roast so as to get plenty of rich bone broth in the mix and boy did it pay off. I have 3 quarts of birria going in the freezer to pull out for quick taco meals later. Damn solid day.

So did you use any goat? Looks great!

Nope just cross cut beef short ribs and chuck.  I do need to make some cabrito soon though.  Thanks!

Mom tacos with just meat and crappy shredded cheese is like a top 20 meal for me. I hardly ever make it though.

My initial reaction was that Mexican blend is maybe a little on the fancy side, but those last two types of cheeses in the Kirkland's sound downright gourmet.

Ultimately, I'd say whatever shredded cheese mom might grab at the grocery store qualifies. It could be just whatever's on sale.

Had some mesquite smoked ancho pork butt in the freezer. Sous vide for 5 hours @154, chopped, and onto the Stone for some ancho pork tacos.  Thawed and heater some posole verde as well.  Full af boy.
