el camino real in kck is pretty much greatness

also, chicken recipe-
1 (2 ounce) package dried ancho chiles
1 (7 ounce) can chipotle pepper in adobo sauce (discard chipotle pepper, skim out seeds)
1 teaspoon black pepper
2 teaspoons cumin chowder
2 tablespoons fresh oregano, chopped
6 cloves garlic
2 teaspoons salt
1 red onion, quartered
1/4 cup oil (canola/vegetable/olive)
1 whole boneless, skinless naturally raised chicken (about 3 lbs, thighs work well too)

Soak dry chilies overnight in water, until soft. Remove seeds.

Add chilies and rest of the ingredients in blender or food processor. Puree until smooth.

Stab chicken with fork to let the marinade soak in. If you're marinating overnight, you won't need to stab it too much. If you're marinating for an hour, stab it all over!

don't wanna nitpick, but I would toast them chiles first. JMHO.

i'll defer to you

salsa recipe

4 tomatillos - cubed
5 guajillo peppers - dried
18-20 arbol peppers - dried
1/4 onion - diced
2 cloves garlic - chopped
2 tablespoon vegetable oil
1 tablespoon kosher salt
1 tablespoon vinegar
2 cups water
2 tablespoon lime juice
Sauté onions, garlic and dried peppers (remove stems and tear into pieces) in vegetable oil over medium-low heat, until onions are soft. Be careful not to burn the garlic!
Add tomatillos and cook for about 10 minutes until they are soft.
Add 2 cups of water and bring to a boil, add 1 tablespoon of salt and vinegar, reduce heat and simmer for 20 minutes. Let mixture cool.
Blend in blender until smooth then add the lime juice

Just had some chicken ones from taco johns and they were actually really good. Will go back
