Or maybe they just had a conflicting schedule with the previous actor.
Or maybe they just decided to make the night king actor a stuntman because he going to be doing some crazy awesome dragon riding stunts soon.

incorrect. he's mostly makeup/prosthetics, and CGI adds the blue eyes and icy texture. it is known.
