this isn't adobo.  It's dried chile's that I boiled and then food processed with the other indgredients .  I can't remember the name of the chile but I think's it's kind of like an anaheim(?).

The recipe is supposed to be a Chipotle copy.

4 guijillo chiles
2 teaspoons cumin seeds
1 teaspoon ground cloves
10 allspice berries
1/3 cup Mexican oregano
12 sprigs fresh thyme
6 garlic cloves
1 Spanish onion, roughly chopped
1/3 cup cider vinegar
1 (6 to 8-pound) beef roast
Salt and pepper

I found the Chile's at the "Mexican" Price Chopper dried.  bought 4, boiled them to soften them a little bit then combined everything and food processed the crap out of it.

It was good shredded and in a tortilla with tomatoes/cilantro/sour cream.  I think it would have been closer if I had salted it really well.

either way pretty good and easy.

Made a chinese brown sauce like you'd get with beef and broccoli.  very easy and turned out good.

Beef Broth
Oyster Sauce
Soy Sauce
Garlic
Red pepper flakes (I tried to spice it up but a paste added would have been hotter)
corn starch of flour to thicken it.

I ate with Shrimp, rice, onion, mushroom.  was pretty good, though I would have liked it hotter.
