8 eggs
3 pints dairy (I did half milk, half half-and-half, you can go anywhere from all milk to half cream and be alright, all I had was half and half for my coffee on hand)
2/3 cup sugar + 2 tbsp
1 cup bourbon
Separate yolks from whites, mix the 2/3 cups of the sugar with the yolks and whisk until smooth/light in color, in another bowl mix the rest of the sugar and whites, whisk to stiff peaks. Add dairy to yolk mixture, mix until smooth, add bourbon (don't add first or you'll curdle the eggs), mix in egg foam, should all fit in a half gallon milk jug. Let it sit for a few days in the fridge, the high ABV (~13%) will kill off anything that might be lingering in the raw eggs, enjoy.
