Need to plan my whole setup and get the wires/cables run throughout before drywall goes up. Would like to PM and share some of my ideas with you and get some feedback.

Trying to have one "cabinet" with STB/DVR, PS3, receiver, zone/room control, etc.

monoprice.com for bulk cabling
DO NOT BUY their HDMI cables, they are crap.  buy mediabridge from amazon.com, the metal is built into the head of the connector instead of tabbed in at the tip like monoprice cables.

If you are going for one cabinet also think about cooling the area.  That could be something as simple as an open face, vented door, vented door with active circulation, or some even put in dedicated hvac equipment.

Micro Center in OP for reasonable 30+ ft HDMI cables if you're anywhere near KC.  Don't finish your ceiling just paint it black and put up flexible track lighting that you can dim.  MC also has black plastic cable covers for your white speaker wire.  Boom cabling made easy.

have you considered using hdmi over Ethernet  for longer runs?  I  would run Ethernet to all tv locations-it  is cheap and can simplify xboxes, rokus etc.  Also,  think about an Ethernet run the optimal  location for your wireless router.

 I  would run audio and/or video for patio, deck, masterbath, etc now while it is easy.

Kstate Bachleor of Science scrubs will never plan out wires, drywall, and sound quality for home theater builds.
