Last night, we were making quesadillas with some leftovers from taco night. I threw some leftover rice in the skillet along with some shredded cheddar. The cheese fried the whole works into a sort of crispy cheese / rice pancake. I put chunky salsa on top. 7 / 10 would do again.

I had some leftover cold chicken and I thought man what would happen if I mixed it mayonnaise like I would a can of tuna?  I added some additional chopped veggies and boom:

I did that with some stale bread the other weekend.  I dipped them in some sweetened egg bath and then fried them.  I called them Sweet Fry Bread (not Indian kind). They're really good with cinnamon too.
