she doesn't like trends, prefers to be "unique", doesn't wear a lot of jewelry, wants something simple, strongly against blood diamonds etc.

i'm thinking vintage/antique.. thoughts/experiences ?

Have her sit down and watch Blood Diamond.  When it's over ask if she still wants one.  You're welcome.

Ditto.

When you buy ask for the child slave free diamond.

Get a Canadian one or a lab produced one. It's better for the ethics.

Tattoo a ring on her finger like the duck dynasty guy.

seems like "blood diamonds" should be worth more than those procured from non blood diamond places

being able to drop a "do you know how. many people died so I could wear this little piece of jewelry?" during conversation would be tight

Cheesy Mustache QB might make an appearance.

New warning: Don't get in a fight with someone who doesn't even need to bother to buy ink.

Contact her mom/grandmothers and see if they have a ring they want to pass down.
