Not sure if I should post this here or in the cooking thread but does anyone have any suggestions on sausage making equipment? I'm slaughtering so many pheasants this year and I want to make some half pheasant/pork sausages.

I don't need some fancy industrial grade stuff. I just need a little machine to grind up 5-10lbs of meat and stuff it in a sausage tube. If I enjoy the end product I would probably upgrade in a couple of years but for now I just need an entry level sausage making grinder/stuffer.

Any recommendations?

grilling season is upon us lads!  bought a propane grill last year and worked great, but a big wind storm last fall blew it over on the deck before i brought it in for the winter.  some pieces broke and tried firing it up over the weekend to no avail.

think i may go the pellet route this spring.  had a traeger in the past, didn't love it, didn't get hot enough for grilling, fine for smoking.  i'm sure they've gotten better, and there are a lot more options now then when i bought it 17 years ago.  what should i be getting?  also like the thought of ceramic grills so would listen to those opinions also. 

this thing will be used 90% for grilling would be my guess but would like the option to smoke on it also.

Green mountain grill (pellet smoker) I've had several friends that love/use theirs for smoking/grilling.  I think you can get it up to 450 degrees to sear/reverse sear.  The new traegers all get that hot as well.

Burgers cook up fine.  IDK about anything else though.

Back in January I made some pastrami.  Cook setup was optimized to spend almost no time outside. Charcoal snake with some real wood kindling for smoke, finished in a low over.  Pretty happy with the results.  Flat was cut in half to fit in bags for the cure.

i think they are great.  not any more work than a traditional weber kettle for grilling, a tad bit of work for smoking but they’re pretty good at maintaining temperature.

i had the big green egg.

pellet smokers being used as grills require a lot of cleaning to avoid grease fires.  they really aren’t good for grilling regardless of what their marketing department tells you.

grilling with a kamado is better than a weber in that it gets to much higher temperatures.  you can buy a fan controller attachment that makes managing temperature easier for overnight smokes.

but it’s not as convenient as a propane.  why not just grab the weber genesis 2 e335 at costco?  they have it on sale for $100 off right now.

reviews on the gravity fed charcoal one don't seem all that positive, feel like i'd lean towards something like that over propane
