i like the eff out of ground lamb, but i don't know where to buy it at a reasonable price.  please tell me where, or if i need to buy a sheep and grind him up.  if i need to grind up a sheep, please advise on what parts grind best.

if there's somewhere to buy big chunks of sheep to grind instead of whole sheep, i'd rather do that.  if the price is comparable.

also, what's your favorite sheep breed?  please think carefully before answering.

given your history around here makes me wary to reply, but I'm a glutton for punishment so here goes

sheep are basically small cattle when you boil it all down, thus, the best cuts that you would find in a steer, you would find in a lamb, that being said, I have never eaten ground lamb because our local locker plant makes our ground meat into a summer sausage with jalapenos and cheese mixed in that I think is effing amazing

not to turn this into craigslist, but some of our late born lambs are fed out and sold just like you would for cattle or hogs and we wholesale any cut, not sure where you live, but I do know someone that markets cuts at the Manhattan Farmer's Market.  if you are seriously interested pm me

if I had to pick a breed it would be Hampshire, no doubt, favorites are usually crossbreds though

i live in california, so i need more generic advice.  are you saying craigslist is the best place to look for wholesale lamb products?  i need to know where to look.  and what are you trying to say with the best cuts comment?  that i shouldn't grind the whole lamb?  just spit it out if that's what you want to say.  i may grind it anyways, what the eff do i care?

hampshires, well i wasn't expecting that.  i'm suffolk by tradition, but i can't help thinking on those damn shropshires, if you know what i mean.  do you like hair sheep?  dorpers are pretty striking animals, you have to admit.

why do some goats have wattles and others do not?  is it true that if cooked properly, a goat wattle is somewhat of a delicacy?

What part of Cali?  Just general.  If your norCal or even centralCal, there should be quite a few Basques running sheep that you should be able to buy from.

fresno.  yeah, there are basques, although i think they use peruvians or ecuadorians to shepherd the flocks now.  maybe the basques own the flocks, i dunno.  but i don't know where to buy the sheep products is the problem.  i can drive around and see sheep, but i can't drive around and see sheep products, if you follow.

If you talk to one of the farmers, you can probably just purchase a sheep and then take it to a butcher.

To take this one step further, said farmer will prob have an employee who would butcher it for you for cash on the side.

why would they tell me their secrets?  they wouldn't, that's why.

Maybe don't think about it as $10.99 per pound.  Maybe think of it as not having to figure out what to do with all the other goat that isn't grindable?  I mean, do you really want that clogging up your freezer?

i'd like to do this without talking to any farmers, if possible.

ok, ok what I meant by the cuts thing is, if you are just grinding it, don't use the prime(expensive) cuts, go with the shoulder and neck, they will have a higher fat content to so you will get more flavor. we've sold lambs on craigslist before for this kind of situation, if I were you I'd buy one and have it processed the way you want it so if you want the entire carcass grinded you can.  remember to only use lamb, not mutton. somebody surely has a lamb out there that can be bought.  hopefully this helps, I'm not from the area so idk where the sheep stores are, longshot but you might see if any of the colleges around you have a flock (like us)

suffolks are my 2nd favorite breed, usually my favorite lambs are hamp x suffolk cross because they produce the best show lambs

I hate hair sheep, dorpers are wierd and crazy
