Tried to go to Smokin' Guns last night and was kind of a shitshow I didn't have time to wait for so went to their old location that's now Hawg Jaw.  Got ribs (4.2) and chicken (3.9), fries (3), beans (3.2), cheesy corn (2.1 but I don't really like CC anywho).  Nothing to take a trip to NKC for.

Yeah, good bbq places running out of food seems pretty common, especially among smaller operations.

“Come on down to Nicname’s Hogg Pit. We’re open from 11 until it’s gone. Hurry over!”
If there was a gif of nicname thwarting the attempted-flag-taker and then gesturing him to suck it, followed by motioning for all of Hilton Shelter to boo him louder, it'd be better than that auburn gif.

It's okay, prefer pork

the thing is, pulled pork is really easy to make consistently good. you kind of have to try to screw up or just not give a crap.  brisket is very difficult to make great on a consistent basis, something that restaurants need to do and makes for the better test of a bbq chef imo

This is true and mostly why I never cook brisket. I did one a couple years ago and it was pretty damn good. I basically just threw it together and it somehow turned out great and I know if I did it again, it would be terrible. Plus, I have like a 6-8 hour max on any cook I'm going to do. I don't like any food enough to babysit it all day/night. Agree about pro chefs though. I do wonder if the thin cut places just like it that way though. I'm sure some are lazy and using cheap stuff, but surely Joes could do brisket the "right way" if they really wanted.

joe's cuts theirs thin because it's just easier to throw onto a sandwich and eat that way, but if you cut a joe's brisket into pencil thick slices like q39 does, there's no way it's tender enough to pull apart in the same way.
