If you look at just cost of goods, then yes the margin on beer is high if you're able to sell it from your own bar, like I do. But, the cost to make beer is way more than the grain/hops/yeast that goes into it. Keg costs are sky rocketing, employment costs are high for us since we use the same amount of labor to make 5 barrels as a larger brewery would to make 50.
If you include the fact that brewing equipment is insanely expensive, and most breweries finance it, that adds to operating costs as well.
I know every business has these same or similar operating costs, but as a brewery, to get a high margin on our product we have one option to sell, which is over our bar. When we move to distribution we'll make less than 30% on a keg compared to what we sell it for at the brewery.
Disclaimer: I am in no way complaining or saying my life is hard. It's not. We're doing very well. I also have absolutely 0 plans to add full wait staff at any point, I somewhat get the complaint, but brewery taprooms are not full service bars, nor should they be expected to be so.
