Well, with the hangover and getting home late this afternoon from the tree farm (chainsaws, skid steers and hangovers is a bad combo), I'm getting a really late start.  Don't worry though, I'm not welching, not a bastard like that Paterno sombitch, can't believe he pulled that crap going into the half.

Will prolly be pretty late before the butt is done.  Will post some pix updates as soon as my wife gives me my wifi card back.  I can't believe she was lurking in the chat room when I said I wanted to run through the discount double-check girl.

Such is life...

Hey man, I told you my computer privileges had been revoked.  I ran some babybacks through the smoker also.  I mean, why not?

Thanks.  No reason to be jelly, you have excellent bbs skilz where I don't.  See, it's like a trade-off.  God won't let one person have ALL the goodstuff.

It's an Oklahoma Joes, 1100 cubic inch grill capacity.  It's a good all around smoker but I have my eyes on a bigger one!

 

This one is from memorial day.  12 lb briskie, 16 lb prime rib, rack of babys and 2 whole chickens, 1 being fisted by a beer.

Love the efficiency of the ceramic egg style smokers.  Unfortunately, I'd have to buy about 10 of them to handle some of my parties.  Maybe one day, would def make smoking for me and my wife much easier.

Prime ribs are a labor of love.  Get in good with a butcher and see if he'll sell them to you @ roast prices.  That will usually get you a good price (you know, under $100) or else you'll be spending 1-2 bills. 

With seasoning, add salt but less spices is more.  Let the marbling do all the work and maybe throw in some rosemary and garlic for luck.

That pick makes me hungry all over again bro!

About 30min/lb w/ a 10 min +/-.  This is due to different variables.  I smoke at 225.  Usually zap it @ 350 for 30 minutes to start with to give a good sear.  Depending on the cut (actual prime vs. choice or select), marbling and fat content will change the cook time.  Just make sure you shut it down 10 degrees below your desired temp and let it sit for 30 mins.

Smoked anaheim chilis, queso quesadilla & chicken leg quarters.  Has nothing to do with pulled pork butt is deliscious.
