Different coat colors of labs have different health characteristics?
Yes, Inbreeding. Chocolates are hard to obtain so they inbreed too much which leads to health issues.

Not necessarily breed or size, but this is the lifestyle/chillness of dog I want, while also being able to run around and do active stuff in the appropriate settings.

look into getting a whippet maybe?  not sure.  sighthounds in general are super athletic but also super chill, but the miniature breeds might be prone to being nervous, dunno.

There had been whippets that came up in my search but I'd passed them by b/c they appeared to be in TX or CT or somewhere notwithstanding that they show up as in Seattle on my computer.  I think it'd be weird to get the dog off a plane with no introduction.
