Last night, we were making quesadillas with some leftovers from taco night. I threw some leftover rice in the skillet along with some shredded cheddar. The cheese fried the whole works into a sort of crispy cheese / rice pancake. I put chunky salsa on top. 7 / 10 would do again.

It has vegan cheese on it instead of real cheese! (Not straight off the block tho)
