Any fun ideas for tomatillos, other than salsa verde or something cooked in salsa verde?

i make a pretty great chicken tinga based on this recipe. usually use dark meat from a carniceria instead of breast

Cleaned out the deep freeze last weekend and found some beef soup bones.
Cooked them up in the crock pot and separated the meaty bits from the bones. Shredded/chopped the meat and heated it with BBQ sauce for a couple of hrs in the crock pot. Made a pretty good BBQ beef for putting on sandwiches or baked potatoes. Also saved some of the broth for later projects. Gave one of the roasted bones to the dog and he snarled at us whenever we got within a 5 foot radius of the bone. Had to confiscate the bone because it was breaking into pieces that could be hazardous for the pup. Anyway, I was pretty happy with how it turned out.
