2 cups flour
2 tsp cinnamon
1 tsp baking soda
1 tsp salt
1 cup butter, softened
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp vanilla extract
3 cups oats
1 cup raisins
1 - whisk dry ingredients (flour, cinnamon, baking soda, and salt) together in a large bowl
2 - in a separate mixing bowl, beat butter, white sugar, and brown sugar together with an electric mixer until creamy (2-3 mins). beat in eggs one at a time, then mix in vanilla.
3 - gradually mix in dry ingredients from step 1, then add oats and raisins, and continue mixing until thoroughly incorporated.
4 - cover the bowl and chill the dough in the refrigerator for at least 1 hr
5 - preheat oven to 375; grease two cookie sheets (i like to use melted coconut oil). take two small bowls and put some water in one, and about 2 TB of white sugar in the other.
6 - roll the dough into (24) balls and place on the cookie sheets. take a fork and dip into the water bowl and sugar bowl, then flatten each cookie, re-wetting and re-sugaring the fork as necessary.
7 - bake for 8-10 minutes (until light golden brown around the edges, and the centers are nearly set), switching rack positions halfway through. allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
