Title: Bruschetta!!

Of course everyone knows this appetizer mainly consists of a grilled bread which is then rubbed with garlic and topped with olive oil, salt & pepper.   The question is, where does one go from there?

Cheeses....
1a) Pecorino Romano.  Was my hands down favorite with it's almost crunchy texture and salty taste but the gap is quickly being closed by ...
1b) Soft Chavrie.  Equally salty as the Pecorino Ramano but textured like an ultra creamy spread (still uses goats milk like the Pecorino)
3)   Mozzarella.  Pretty generic (as the name suggests) substitute if you either: a) have neither of the above b) have absolutely no culture/taste

Spices...
1) Basil, in any variety (if it's dried, your a moron)
2) Anything not basil but also not nutmeg, cinnamon or allspice

Meats...
1) Prosciutto
2) Pepperoni


Let's get this thing rolling!  Open for any sugestions and would really like to hear how you guys do it although I am pretty darn sure that I would win in a bruschetta-off!

Although not always, most versions have adapted this!  You passed the test, you can now study under me.  Is that all you have to offer though?  If so you are gonna be a chore.

look cINd, i'm not sure you're going to find a lot of people defending your pro-bruschetta position around these parts.  you're dealing with a bunch of hayseeds from mantucky who think bruschetta is a brand of frozen pizza.

but, since you asked- here's my favorite bruschetta recipe:  1/3rd cup air, nothing else, nothing else, nothing.  top with nothing.  serve.

My fav cheese bread stick is:

1. French bag cut in half
2. olive oil
3. sea salt
4. toast it half way in the oven
5. vlaskaas cheese
6. melt/toast the rest of the way.

It is a good bread stick, but still just a bread stick.

Back to the topic at hand. cId I think some morels could be delish but hard to find. I also think a little sliver of green chile (real green chile, non of this anahiem or poblano bullshit) with some manchego cheese and a dabble of olive oil  could be good.

I always thought it was pronunced "brew-SHetta," but it's not.  It's pronounced "brew-sKetta."   A super weirdo waiter was repeating my order back to me, and when I would say "brew-shetta," he'd repeat back "OK, an order of brew-sKetta," and I was like "Wow, this dude does not no how to pronounce my apps."  Dude brings it to the table and is just over the rough ridin' top about saying "brew-sKKKKKKetta."  I repeat back, "thanks for the brew-shetta, LOL."

Well, I look it up when I got home and the weirdo was right!  How embarrassing!!!!!

french bread sliced to preference and brushed with olive oil, although I recommend thinly cut.  Tomatoes, basil and feta added cooked in the oven on a cookie sheet at a relatively low heat, probably around 300 although not an exact science.  I prefer the bread to not get too toasted, although that is also just a preference.  If you don't like feta than that is your loss.
