Title: Mac & Cheese: an American Classic

Ok, we all know and love mac & cheese.  (if you don't you're a God damned dirty communist)  My question to you is:  Have you ever made cheap chowder mix mac & cheese, but then added shredded cheddar or colby jack to it?  rough ridin' AMAZING!  My wife says it tastes the same, she's also quite simple-minded.

Chedder is not a good additive to MAC, it melts all wrong and makes everything all oily.  Go with like a fontina.  And sub cellentani for the traditional elbow macaroni noodles.  Top with some yummy breadcrumbs (panko is good) and bake that bad boy til golden brown and delicious.

I believe you, but baked homemade style M&C is a completely different animal than the All American sodium packed 50 cents a box M&C.

i went to price chopper the other day (who knows why, the place sucks) and it was on sale - 6 boxes for $3.  i bought 6.
i've been eating 2 hebrew nationals and a half a box of mac and chees for dinner, + 2-3 glasses of milk.  seems legit.  i found some good hot dog buns that have been uber pimp too. 

seems like a perfect amount of food but very unhealthy.  i won't make this same mistake again.  should i become a vegetarian?  probably not but i do want to increase my intake of fruits and vegs.  i think i'm going to get a kickass juicer from william sonoma.  oh well, what's the crime?

Was 'pakin with the fam 2 years ago at the Las Vegas Invitational.

While staying at the The Hotel @ Mandalay Bay I had the most incredible lobster mac & cheese.  Most amazing thing I have ever eaten.  :lick:

Don't worry boys, TH didn't have to pay for the $25 special.

normal cheap boxed plus blue cheese (decrease butter amount accordingly) & rosemary.

don't overcook (way less time than the box says) and don't overmilk (way less milk than the box says).



haven't found the right wine yet.  maybe something fruitier than i normally drink.

used to like the cheap stuff...then got sick after eating it one time(prally had nothing to do with the MAC.) I haven't been into it since. I'm sure if i would try some of the suggestos in here, i would be a fan...

Just had regular Kroger brand Mac & Cheese this past week. Best M&C that I have had in a while. Tasted like they added a bunch of sugar to it. :lick:

What does everyone think of Easy Mac BTW? I think it's good every once in a while but if you have it a couple times a week it gets nasty. Agreed?

1. Boil noodles in water.  
2. Boil milk.  Once boiling, insert a bunch of cheese (can be any flavor really, or a mix).
3. Wait till cheese is completely melted, if the consistency is too thin, add flour to mix.
4. Add spices to cheese sauce - I stick mostly with peppery, Italian seasonings.
5. Strain noodles, mix in cheese sauce.

Some company (Stoufers?) makes a fancy version of MAC.  Has a really good cheese sauce and tasty breadcrumbs.  Think it was like $4 or so.  Only takes like 15 minutes to make.

If I eat regular blue box stuff, I actually like to add a dab of ketchup to it. Makes it really pop.

A gourmet recipe I'm working on-

large elbow noodles
a little bit of chicken or pieces of bacon
A little bit of dijon mustard
red ground pepper for spice
a little bit of standard alfredo with some cheddar in it
Then, I do a couple layers of a few different cheeses. I've been working with cheddar, parmesian, gouda, and a little bleu cheese.
A-mazing.

capital grill has lobster baked mac and cheese.  -baked campanelle pasta and fresh lobster meat, tossed in a Mascarpone,
Havarti and Grana Padano cream sauce, topped with Panko bread crumbs and grated white cheddar.

funny thing about theirs is they don't use a specific type of cheese, they just use whatever is sitting around the kitchen.

You should get a badass blender and start making green smoothies.  You can dump in a shitload of spinach and other greens and just a banana and a couple of strawberries makes it pretty rough ridin' good.

yup, i'm pretty much on the fence- badass blender or badass juicer.  seems like a truly badass blender might be a better investment b/c it can do more things than a badass juicer could.  thoughts?

It's exactly what i do 3-4 days a week.  You can make them the night before drink it on the way to work.  You can also mix the fruits and greens up to get a bit of a variety.
