You can #ack lima beans into a bunch of stuff, actually. They are sort of like peas that way.

i never seek them out, but sometimes encounter them when working with bulk frozen mix'd veggies

I was referring to the nearly limitless types of meat that go well with red beans and rice.  I could put any of the meats from the lunchack thread into RBAR and it would still be delicious.  Even the tuna!

Chicken is great too. Hibachi hut has braised pork with theirs that is excellent (though needs more spice)
