Army is a good one. I vote for them. With our ties to FT Riley, I think that could be a good series. If we want the army men at FT Riley to cheer for us instead of against us, I also think Navy or Air Force would be good.

Others:
UNLV - for obvious reasons
Wisconsin - because their Jump Around thing would be fun
South Carolina - because the Cocks could be fun to talk to on the message boards
Michigan - because it would be fun to see a game in the largest stadium in the country
Clemson - is their Howard's Rock thing as dorky as it looks in TV, or is it actually cool to see in person?
Tennessee - I love their Rocky Top song
Florida State - I want to see the War Chant in person
Duke - do they have Krzyzewski-ville in the fall?

I'd rather play teams at home. Auburn at Auburn was cool but this return trip has me very excited. I suppose you have to play home and homes though

So you could mush your dad and all of your childhood friends (that's why I picked it, anyway).  Also the Ft Riley thing would be funny.
