GF went to creighton and was super excited when a runza opened up in KC. I had it once. It was terrible.

One game a year my dad makes around 70 bierocks for our tailgate in the east grass lot.  Last year we had half left over and just started handing them out to students as they walked by.  75% had never heard of bierocks before.

all this cabbage talk has made me have a hankering for my great grandma's soup

currently making my great grandma Reimer's Komst Borscht

it is a fabulous cabbage soup that has a sum so much greater than the parts

salt & pepper whole chicken with giblets removed
place in soup pot and just cover with water
add bay leaf and 1 minced garlic clove
cook until chicken is done
remove chicken

add 1 diced onion to stock
2-3 medium 1" cubed potatoes
half head of cabbage coarsely chopped

debone chicken
add back to stock when veggies are soft
add 1 can diced tomatoes
salt & pepper to taste
add 1/3 cup sour cream
add 1 tsp vinegar

stir, remove from heat and let sit

ladle and serve with a dollop of sour cream and buttered toast

*don't forget to save the chicken remains for chicken scrapple

The bierocks I like all skip the cabbage.  Ham and cheese, bacon and egg, cheese and beef all winners.  Weird cabbage, onion, beef runza crap can GTFO.  I would call those authentic but whatever Runza does is not authentic, its shitting on German heritage, putting that crap in a roll and serving it to Nebraskans.

I've lived in Kansas, Oklahoma, Texas, Massachusetts, Maine, New Hampshire, and Iowa and the only ones correct are Texas and Massachusetts. Pretty sure that wasn't his point though. Bierocks are awful, sys.

Point of order, Bierocks aren't German food, though brought to the Great State of Kansas by German immigrants, these were the Volga Deutsch http://en.wikipedia.org/wiki/Volga_Deutsche (http://en.wikipedia.org/wiki/Volga_Deutsche) a group of immigrants invited to settle along the Volga river on the Russian frontier (the russian interior)  When they got there they realized there was a reason that there weren't already Russians living there, it sucks.  Many of them then doubled down and headed to the US, settling in the midwest.  They brought with them a dish by then called a Bierock but it was actually influenced by the Polish dish the Pierogi http://en.wikipedia.org/wiki/Pierogi (http://en.wikipedia.org/wiki/Pierogi) (where the word comes from) they had encountered in their travels.

What i'm trying to say, is that if you went to Germany looking for a bierock, you wouldn't find one.

cabbage is de rigueur en taquerias in nw mexico, fairly common in ne mexico and hard to find going south from there.  it isn't really supposed to be in a burrito, but burritos are a mostly american food and mexicans hardly know how to make them.
