Pre-heat oven to 375
Complete cover two large chicken breasts on both sides with Weber Kick'n Chicken

Melt two tablespoons of butter in a large oven safe pan over medium/high heat
Sear the chicken for 4 minutes on each side
Dump in a half cup of chicken stock and throw the pan into the oven for 20 minutes
Pour the buttery reduced chicken stock on the chicken out of the pan
Eat it

2 Cups roasted Corn
2 red peppers diced
1 can black beans (low sodium for 'sclams)
1 medium red onion, chopped
1 head of cilantro chopped
combine in bowl
1/3 cup red wine vinegar
2 tsp Olive Oil
1 tsp sugar
1 tsp chili chowder
1 tsp cumin
1/2 tsp black pepper
pinch of sea salt
combine these then toss the first mixture in it. Refrigerate overnight to marinate and fracking enjoy.

blend cream cheese, mayo, diced canned green chiles, and diced pickled jalapenos. cover with a layer of grated parmesan (not the chowder stuff, the real thing). Melt in microwave or oven. Eat as dip with tortilla chips.
Its jalapeno popper dip and its the freaking bomb. :love: :lick: :love:

They do (at least in Omaha). Another piece of advice: Don't grab the pan handle from the oven even though you are completely used to grabbing it from the stove. I now have no fingerprints on my right hand.

It's just gonna get mixed up with the stock anyway. Just don't use the entire amount of "sauce" left in the pan and you'll be good to go.

'clams, I fired up the old Big Green Egg today. Made two absolutely ridiculous slabs of ribs.
Smoked at 200 F for 3.5 hours
Hickory chunks
Rib Rub (dry, forget which brand)
Now I have one more slab on and will take it off around midnight since I love staying up late and stuff
Edit: Tomorrow I'm smoking a turkey breast. Plan is to smoke it at 250 or so for about 4 hours. Hickory chunks. Poultry rub (dry, forget which brand)

i did 15 pound pork shoulder, 3 slabs of back ribs, a whole chicken, and a dozen jalapeno poppers last friday for the QATZ game. crap took me 18 hours.

just did my first brisket on monday. 2 chickens going on tomorrow. Did the brisket with Pecan and it was fantastic. Chickens are going with apple.

Mccormick's Monterey seasoning ain't bad. Really good on grilled shrimp as well. You should be able to find that any just about any grocery store.
