Title: Authentic Mexican food

Outside of someone talking about how athletic their 8 year old is, is there anything more annoying than p eople talking bad about a fine Mex restaurant because it's not 100% "authentic"? No. I never hear anyone talk about the authenticity of any other food, otoh the butthurt really swells when it comes to Mexican.

Not real sure I guess. Generally speaking, if I'm eating food, my only criteria for judgment is whether it tastes good.

Ironically, I was just in La Hacienda and I think, out of 30 people, there may have been two who spoke English as our first language. (I was served promptly and politely, not racist FWIW).  What I'm trying to say is that daris has done a great job promoting this place and there are obviously a lot of ESL people reading the board.  We should probably include a translate function to make it easier for this significant group of goEMAW / La Hacienda supporters.

Nah Carolina's all about weird vinegary sauce. Think you're right on the meats though, just looked that up and KC uses a wide variety of meats. I just said pig because that was my personal experience and it's generally ignored down here so it seems more prevalent in comparison.

I would consider Arthur Bryant's and Gates to be the two classic KC barbecue places that best define the Kansas City barbecue style, and both of their sauces are vinegar based.

Agree that Gates is somewhat sweet...

carolina is vinegar based

big difference, no mistaking the two.  anyone who has had carolina sauce wouldn't call what we have in kc, the same category.  carolina is basically vinegar with rub/seasoning in it.

You're referring to eastern style Carolina sauce.   Western style does have varying levels of tomato, but not near as much as the ketchup based KC sauces.  I prefer a thinner, Gates style sauce over a thick sauce like Masterpiece.

I recently learned to make authentic tamales, sopes, chili rellanos, etc at a cooking class in Mexico.   :lick:
