I have finally created the perfect Chicken Tikka Masala.  Indian Gastro Brew Pub is all coming together now.  (in before Chicken Tikka Masala isn't actually Indian food)

cut 3 large chicken breasts into pieces and marinate in 1 cup yogurt, about a thumb sized piece of ginger, 2 teaspoons of cayenne, 5 teaspoons of garam masala (or 2 of Cumin, 2 black pepper and 1 cinnamon), 1 tablespoon of salt and the juice of one lemon.  let it marinade for about an hour then put on skewers and grill for 5 minutes a side.  melt 2 tablespoons of butter in a pan and saute 3 garlic cloves and 1 jalapeno and 1 serrano for about 2 minutes.  then dump in a can of tomato sauce and 2 cups of half and half, 4 teaspoons of cumin, 4 teaspoons of paprika and 1 teaspoon of salt and simmer for about 20 minutes.  then throw in the chicken and simmer for another 10.  then serve on basmatti rice and top with chopped cilantro.  pretty easy actually.
