My prime rib last week was so tender and juicy that I kept thinking it had a sous vide quality that IYKYK.

Apparently they wood roast until a certain temp and then hold it in a steam oven that maintains temp and moisture akin to sous vide.

The Sai Ua (9 o'clock), Laab Moo Kua (2 o'clock), and Gaeng Hung Lei (6 o'clock) were the standouts for me.

It's the Khan Toke Yai. The larger of their Lanna Small Plate samplers. Our server was impressed that the three of us took it down.
