It seems like big shoulder pads/cowboy collars peaked in the mid to late 90's.
I'm sure the equipment has improved but I think the move to more spread based offenses also contributed, especially on defense.
Less "smash into your man and occupy the hole" where big shoulder pads help and more "drop into coverage" where they make it harder to turn.
