we actually have a grill pan and I will just heat up it and a second pan and throw the sandwich on the grill pan and then put the second hot pan on top of it. works great. I do use a tinfoil covered brick for making cuban sandwiches on the grill in summer.

I'm not trying to limit it to one cheese, just saying at least some smoked gouda. I'm thinking 3 different cheeses minimum.

I say boarshead rare roast beef and hickory turkey. bacon also
