Got a little cheapo smoker that isn't good for much in the way of real meat smoking, but it works great for smoking cheese, hard boiled eggs, or other non-meat items.

Did mild cheddar the first time, then some habanero.  Even did it with a big block of cheese slices from Sam's.  Worked pretty well and made them semi-palatable.

Need to make some more one of these days.

Thinking an extra sharp cheddar or a pepper jack this time.  :lick:

thanks  Seems cheese making is becoming the new "home brew" hobby and lots of info and supplies on the interweb.

Tonight I quartered it and spread it on toasted bagette with honey, delish.  Good flavor with creamy texture, not bad for my first cheese.  Started a brie a few days ago, have to wait 4 weeks.

Cat from DC, could you describe the phrase "mind's eye" in your own words? T-Y!

Sure, conceptually it’s different for everyone.  It’s what you imagine in your own head through your own conscience experience.  In this instance, it was a playful way of describing something, not meant to be taken as a correct use of the term.

The first one!

I feel like there is a thread about this where the OP was either super high/drunk and delved into this.  In advanced psychology studies of conscience, it’s a given that the researcher is conscience, and basically a benefit of the doubt the test subject is conscience too.  In the real world, subconsciously this is a given too.

The problem is each perceived conscience is a private experience.  So there is no way to absolutely validate anyone else’s conscience-ness.  Therefore the conscience experience is individually experienced through that subjects eyes/ears/etc.

It’s fascinating to me.  We all perceive ourselves as conscience but we can’t independently validate anyone else’s.  We also see everyone else in their past state, which is a completely different discussion.

I picked up a chunk of the Alma Creamery's New York Sharp white cheddar this past week. Absolutely delicious with a great slightly crumbly texture. Also, if you haven't sampled their fresh cheese curds at the new store at the I-70 / K-99 junction, you need to do so. Cheese curds never taste quite right at home but the samples in the store are outstanding.
