great way to handle this thread and exactly how i decided to, by spliting them into two different types: stadium style and respectables/home.
@ stadium : extra pickled jalapenos
@ home : chips, taco meat, queso of velv + extra hot rotel that I blend in cuisinart, quac, hot salsa, sour cream, green onion, pickled jala's, fresh jala, black beans, pico de g.
Also, does anyone know how to melt regular cheese (not velveeta) so that it's not clumpy and gross? I've seen it done and had it places but every time I try to melt regular shredded cheese it is terrible.
shred it first (cuisinart) and cook it slow & low. add butter if needed to lighten it up.
