I'm wanting to rip parts from some DVDs, so I'm looking for some flexibility along those lines.

DVD Decrypter (now dead, but still able to be found) and Handbrake are the most prominent ones.

    Since 1996
Handbrake has Mac, Windows and Linux versions.  It's free.  It's also my favorite.  Rips look really good.

I've been using DVD Decrypter + Videora to convert my DVDs into MP4s for my new nano, and the quality is outstanding.
