You know, like sirloins.  You rub some taste on the SOB and cook it lower than a strip or filet and it'll be just as tender and tasty.  Just imo.

agree on the "bad steaks"  you can pick up sirloin for 2.99/lb at price chopper, season it just right, little tenderizing etc and they can be fantastic.

Try making your own grilled cheese with thick slabs of pepper jack. It so tasty.
