The rivalry with Mizzou dates back to the Civil War and Quantrill's raid.  K-State is our in-state rival.  I'm not sure where you got the notion that a school could only have one rival.  Florida has Georgia and Florida State.  Notre Dame has USC and Michigan.  Texas has A&M and Oklahoma.  Lots of schools have two rivals.
