So, I love how restaurants can have room temperature ketchup and mustard. But the stuff I buy says, "refrigerate after opening".
Will I die if I eat my own room temperature mustard?

my guess is that you are likely to have out longer than the restaurant so it needs to be maintained better and longer.

prevent lawsuits from the very rare chance you get food-poisoning. You don't really have to refrigerate jellies and jams either (but it does help them last longer).

I bet it doesn't matter for them because they go through the stuff so quickly. Ketchup or mustard might go bad if it sits at room temperature for a certain amount of time that restaurants don't have to worry about. :dunno:

Catsup starts losing its taste and color after about a month or two at room temperature. Still safe to eat for about another month.
It tastes better because, foods at around room temp have more "flavor" to the tongue, and the the chemical breakdown that is occurring (basically decomposing) while its is sitting out is tasty to you.

Where I bar tended in Manhattan they would take the Heinz catsup bottles and just top them off with the huge dispensaries of Sisco ketchup. I think the ketch/cats at the bottom of the bottles may have been there for years.

i like all my condy's cold though, all of them. well, butter- i leave my butter out sometimes so i can spread it on my bread easier. no more than a day at a time though.

Its hard to think of a situation more frustrating than trying to spread cold unspreadable butter on a piece of bread.

Yeah, I've spent the last few minutes trying to think of things more frustrating than trying to spread cold butter but wasn't actually able to come up with anything. I love bread. I use Land-o-lakes butter, it's worth the extracost. One place you don't want to skimp- butter.

Nuking a delicious bowl of Spaghetti-O's (with Franks) and not being able to eat it right away because it burns your mouth (or esophagus).

Yeah, I waited tables at a place that did the same thing -- except we refilled with Heinz. (Classy joint, right?) The stuff at the bottom eventually goes bad (tastes like crap) and you have to throw it out. You can tell it's turned when it creates bubbles on the sides of the bottle.

Great thread. Lots of useful info. I prefer my condiments room temp, as well. I usually just ask for an obnoxious amount of ketchup packets/salsa/mayo when I go through a drive thru. Better yet, if you go inside and they have it laying out, you can grab enough to last for a while.
