They're horses. They have two: Boomer and Sooner.

The real mascot represents the people of the Land Grab of the Oklahoma Territory.  Actually cool in theory, until you try to put something into a foam costume.  Maybe a pioneer with a green flag would be cool.  Or an OU flag on a wood peg like they would have used to mark the land.

Weren't Sooners cheats, ie those who snuck across the border before teh official start to stake out claims?
