I'm going to be frank, I am a nobody in the long bone game.  I'm not afraid to admit it as I won't get any better if I don't look it square in its rough ridin' eyeball. 

Question: what exactly is the benefit of said long bone?  Better flavor somehow?  Handle?  tia

Nope.  I had just gone to the grocery store and stocked up on assorted grilling meats to cook out at home when this long bone craze started back up, but I should be through them today.

The Sullivan's here is right at the convention center.  What else is?  A comicon I just learned is running through the weekend that has all sorts of goofs out and about.  If I can get enough done today, I may combo a long bone trip with a freak scavenger hunt tomorrow.

7's recognition of Cal as the long bone of coaches led me to see what the scene was like in Kentucky.  I didn't see a Lexington long bone, but Louisville's Jeff Ruby's calls theirs the "Hatchet."

Just got back from a venture to Sullivan's.  I went with the intention of getting their long bone, obvs. - http://sullivanssteakhouse.com/seattle/menus/dinner - but found out it's restaurant week and they had this deal going for 3 more nights: http://srw.seattletimes.com/restaurants/sullivans-seattle/#/Enter/.

I figured I'd do that while it lasted and come back another time for the long bone, but I might've mumped up.  When I ordered, she said I could actually get any steak I wanted and they'd bump up the $30 deal accordingly.  For some reason, I didn't have the ball to do a long bone as the main course.  I went with the regular ribeye which made the whole deal $40. 

So, a $10 upcharge for switching to a steak that's $5 more on regular nights according to the linked menu, but on the one at the table it was a $9 difference so it seemed fine.  The long bone was also $62 on the menu, not $61.  So I don't know how the math would've worked out if I'd subbed in a long bone, or if I'd even have been able to eat everything. The cheesecake was relatively small.

I guess I've got 2 more nights at which I could give it a shot.

But even if you just ordered the regular offerings on that deal at $30 total, not a bad dinnerhack.  Lesser eat'rs could even take some to go for a subsequent lunchack.
