Good omelet takes a lot of practice and knowing your pan and heat source really well

Very true.  I'm moving in a month or so, and losing my gas stove for an electric glass top :frown:

It's a much nicer kitchen, and will be way easier to prep and cook in overall, but almost no high-rises in Chicago have gas stoves.  My cast irons are heartbroken.

This was the correct answer, btw.

I think if you replaced the cb hash w/ with bacon and two over-easy eggs on hash browns, you'd really be on to something

Takes forever to heat up, I basically have to cook everything on high.  You have to physically remove the pan to get away from the heat, easy to overcook.

swedish tea ring and coffee, biscuits (good ones, not shitty frozen ones) with butter and 1/3 of biscuits also with preserved fruit and either tea or coffee, bread with soft, ripened cheese and jamon serrano or prosciutto, tomato optional and coffee and a citrus juice.

i could be forgetting some, but i think those are the top 3, in no particular order.

How about a simple one: Apple Fritters from John's Space Age Donuts.  I am not a huge sweets-for-breakfast guy, but these are amazing.  If you get there after 9am, there is a good chance they will be sold out of them.

this is a great choice as well. I should eat good breakfast more often and cut down on dinner.

Egg over easy
Chorizo
Silvas tortillas toasted slightly on both sides (inside still very soft)

Dice egg up to get yoke all over chorizo, then wrap it up and shove in face
